You may see a recurring theme when it comes to my recipes. I love Southwestern and Mexican inspired food. This caviar is my go to when I attend a potluck or want a light yet satisfying meal.
It’s packed full of flavor and nutrition. Serve the caviar with tortilla chips and you have yourself a par-tay! Definitely a fun way to eat your veggies.
Here is my take on a vegan southwestern caviar. Enjoy!
Vegan Southwest Caviar
Servings: 12
Ingredients
- 15 oz Black beans canned
- 1 cup corn kernels cooked or canned
- 1 cucumber chopped
- 1 red bell pepper chopped
- 1 orange bell pepper chopped
- 2 vine ripe tomatoes chopped
- 1 avocado chopped
- 1 bunch cilantro chopped
- 1 small white onion chopped
- 1 clove of garlic minced
- 1 large avocado chopped
- 1 jalapeno chopped (this ingredient is optional)
Dressing
- 1 1/2 cups hummus
- 1/4 cup apple cider vinegar
- 1 tsp chili powder
- 1 tsp sea salt
- 1 tsp pepper
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Combine all veggies and beans into a large bowl. Mix until well combined.
- In a separate bowl, add all of the dressing ingredients. Mix until well combined.
- Pour dressing over veggies and mix well.
- Cover and refrigerate for at least an hour so everything can merry
Notes
You can eat this as is or serve it up with tortilla chips. Enjoy!
