Vegan Southwest Caviar

Ingredients

  • 15 oz Black beans canned
  • 1 cup corn kernels cooked or canned
  • 1 cucumber chopped
  • 1 red bell pepper chopped
  • 1 orange bell pepper chopped
  • 2 vine ripe tomatoes chopped
  • 1 avocado chopped
  • 1 bunch cilantro chopped
  • 1 small white onion chopped
  • 1 clove of garlic minced
  • 1 large avocado chopped
  • 1 jalapeno chopped (this ingredient is optional)

Dressing

  • 1 1/2 cups hummus
  • 1/4 cup apple cider vinegar
  • 1 tsp chili powder
  • 1 tsp sea salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  • Combine all veggies and beans into a large bowl. Mix until well combined.
  • In a separate bowl, add all of the dressing ingredients. Mix until well combined.
  • Pour dressing over veggies and mix well.
  • Cover and refrigerate for at least an hour so everything can merry

Notes

You can eat this as is or serve it up with tortilla chips. Enjoy!
