My all time favorite filipino dessert is bibingka. I was elated when I found the recipe that Astig vegan created! It’s so simple with minimal ingredients.
These bite size treats are perfect to bring to any party or to give as gifts.
Vegan Bibingka
Ingredients
- 1 cup rice flour
- 1 cup organic sugar
- 3 tbsp flaxseed meal
- 1/8 tsp salt
- 2 1/2 tsp baking powder
- 1 can coconut milk
Instructions
- Mix all ingredients in a mixing bowl. Once combined pour mixture into greased mini muffin pan, filling 3/4 of the way. I used coconut oil to grease my pan.
- Bake at 350 degree fahrenheit for 15 – 20 minutes or until golden on the edges. Cool before serving.
