Vegan Pumpkin Pie

Ingredients

  • 14 oz pumpkin puree canned
  • 3/4 cup coconut milk
  • 1/2 cup brown sugar
  • 1/4 cup corntarch
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 vegan pie crust mine was store bought

Instructions

  • Preheat oven to 350 degrees Fahrenheit
  • Place all ingredients into a bowl, stir until well combined
  • Pour mixture into the uncooked pie crust, spread evenly and bake for 60 minutes
  • Allow pie to cool before serving
